Your oven is about to get interesting.
In 2026, baking leans into contrast. Think crisp edges with gooey centres. Tangy citrus glazes. A little sour. A little spicy. Even “snack cakes” with fillings you do not see coming.
We’re always looking ahead for what’s to come in the baking world, and here is what we are watching:
More texture on purpose. Crunch, chew, cream, snap.
Less ultra-sweet. More lemon, yoghurt, cultured flavour.
Small treats, big flavour. Mini portions, premium ingredients.
Nostalgic bakes with a twist. Familiar, then surprising.
Functional cues. Extra protein and fibre, without tasting like cardboard.
Where does vanilla fit?
Right in the middle of the magic.
Use vanilla paste in citrus loaves to round out the sharp notes.
Use vanilla paste in protein bakes to bring back warmth and comfort.
Use vanilla paste in filled desserts so the centre tastes like a real dessert.
Save this for your next bake day.
